Since I baked my frost sour dough 8 days ago I have gone onto bake 5 loaves and have been iterating on all sorts. The below crumb shots are of first loaf- no Rye ( left) and third loaf 20% Rye ( right). Learning a lot as I go. A fine balance between flavour and have light airy bread. So many variables.
